Great guide, I even printed it.
But just one question; right when you hatch or catch a pokemon, how do you tell what it's IV's are? Maybe I'm missing something basic.

You're going to have a hard time. Here's the deal: part of stat calculation involves multiplying by the level over 100. When you have 1/100 of the stats you would have at the max level, it's really hard to figure out your IVs with any accuracy.

Luckily there is one hint. The part of the Pokémon's stats that tells you its personality will give you a clue as to the last digit of your highest IV. I'm referring to the bit that says things like "Quick to flee" and such. So if you have a certain phrase and you know what it means, you might be able to tell that your best IV is in speed, and it is within a certain set of numbers.

I don't have that particular set of data available to me at the moment, but it shouldn't take too much searching to find it somewhere on the internet. Personally, I would keep a stock of Rare Candies, use them all on each baby, and soft reset to get back your candies once you've calculated the IVs within an acceptable accuracy range.

I'm about to start EV training my Empoleon according to this guide, and I have a question:
should I cleanse my Empoleon of all it's EV's before I start to train it? Or just leave the stats I'm not going to train alone?

EDIT: I have another question:
If I were to give my Empoleon the Power Lens to train it in Sp. Atk, and I accedentally forgot to give it the Calcium, and I had already fought ten Gastly, would I still be able to give it six Calcium to give it the 100 EV's and then fight 30 more Gastly to max out the Sp. Atk stat?

The thing is, if you have some EVs lingering in another stat, you won't be able to put as many EVs into the other stat if you want. If you have 100 HP EVs, for example, and you want a 252 Sp. Attack, 252 Spd, 6 Def. spread, you wouldn't be able to because you have those left over.

So in short, yes, to completely EV train a Pokemon you must clear out any unwanted EVs.

Do Pokemon gain EV's in the Battle Tower? I'm saving up BP to buy my Rhyperior a Power Weight - for his HP - and he has a good moveset. Since pokemon don't gain exp. in the Tower, can I use him there?

Yeah, you don't get Exp, you don't get EVs.

heres a god way to keep a pokemon with pokerus and traine it and spreed it put it in the pc before you safe then when you turn it back on take it out a gain

Qualot Berry: Lowers Defence
Grepa Berry: Lowers Sp. Def
Tamato Berry: Lowers Speed

Your question isn't very clear, but I assume you're talking about the EV points you receive from battling a Pokémon? Without Pokérus, Macho Brace, or a Power item, the most EVs you can obtain from a fight is three.
