Hoenn: Torchic
Shinou: Piplup and Lucario

I based these on the animé and with Pokémon were the most popular in that reigon

Hoenn: Kyogre
Sinnoh: Lucario

Apart from Lucario, legends represent a region as they are what appears in my mind first.

Well, I go by the starters so this is going to be predictable:

Kanto: Charmander
Johto: Chikorita/Cindaquill
Hoenn: Torchic
Sinnoh: Lucario. I know he's not a starter, but he's like THE symbol of the new generation. ^.^

Jhoto-Celebii and Suicune
